Grilled Feta Toast

Ingredients for 1-2 Serves:
  • 150g Feta Cheese
  • 4 Cherry Tomatoes
  • ½ Red Onion
  • 2 Garlic Cloves
  • A few Rocket Leaves
  • 3 Olives (optional)
  • Olive Oil
  • Chili Flakes
  • Provencal Herbs (Usually Rosemary, Thyme, Savory, Basil, Tarragon)
  • Toast (toasted)

This Recipe is a perfect alternative for vegetarians at a Barbecue. If you don’t like toast you can try it with some baguette. This recipe also works in the oven but it usually takes a little longer. If you do it without a grill preheat the oven at 250°C/482°F.
First of all we’ll need something to put the cheese in, which will be a boat made from aluminum foil. Make sure that you double the foil to prevent anything from burning and that the piece is large enough to close it to a “bag”. Place the Feta on a few onion slices and chili flakes in the middle of the foil boat. All the ingredients except olives will be roughly cut and placed on cheese (Save the rocket for serving). Make sure to add the garlic first so the Feta can take on its flavor. When everything is in the aluminum bag add the Provencal Herbs and pour some olive oil over it. If you want you can also add some more chili flakes to spice things up a bit. Close the foil and put it on the grill for 5-10 minutes (depends on the temperature). If you’re using the oven leave it inside for about 20 minutes. You can open the bag after 15 minutes.
In the meanwhile prepare the toast. When the cheese is ready mix everything up with a spoon and spread it on your toast. Add some rocket on top and enjoy!
