Delicious Spinach Lasagna

I don’t know how you feel about spinach but I personally can’t get enough of it. That’s why I thought some of you might enjoy my recently created Spinach Lasagna Recipe. I really wanted to try this one for a long time now and yesterday it finally turned out as I imagined. For me Lasagna is all about the cheese. So let’s try one with 4 different types of cheese.

Ingredients for 4 serves:

– 130g Baby Spinach
– 1 Red Onion
– 2 Garlic Cloves
– 250g Lasagna Sheets
– 400g Cream Cheese
– 200ml Cream
– 4 Tomatoes
– 150g Goat Cheese
– 125g Mozzarella
– Olive Oil
– Parmesan
– Provencal Herbs, Pepper & Salt

Dice the onion and garlic cloves. Put the olive oil into a pan and fry the onion and garlic, until golden brown all over. Add the spinach,let it wilt and set aside to cool down. In the meantime slice 3 of the tomatoes as thin as possible, dice the other and then cut the goat cheese. Take a bowl and mix the cream cheese and cream with the spinach and the diced tomato. Season with salt, pepper and provincial herbs and add some parmesan. Preheat the oven at 230°C. Take a casserole and start layering. Begin with lasagna sheets and spread some of the spinach mix on it. Decide into how many pieces you’d like to cut the Lasagna afterwards and place a tomato slice on each. Crumble some goat cheese over it and continue with the next layer. For the top layer place the tomatoes onto the lasagna sheets and cover everything with slices of mozzarella and some parmesan. Cover the casserole with aluminum foil and put it into the oven for 15 minutes. Remove the foil and bake for additional 20 minutes. Enjoy!
